Anaerobic coffee undergoes a process in which after the ripened coffee cherries are harvested and pulped, the seeds, or "beans" are set into an air-restricted container to ferment for a few days. The result, if done correctly, is a bright, fruity, complex, and completely unique flavour profile.  Sourced and produced directly from the Villatoro family farm located in the Huehuetenango region of Guatemala, this coffee is handled with extreme care every step of the way to your cup. Coffee of this quality and exclusivity are rare to come by in the United States and abroad, and we have taken great care in roasting them smoothly to their highest potential.
