COLOMBIA NARINO el CIELO ~ MEDIUM ROAST $104

Tasting notes: tangerine, apricot, cane sugar

This coffee originates from small family owned and operated farms at a high elevation in close proximity to the Pacific Ocean. The weather, altitude, and temperature of the region equate to a unique environment that allows for a slow maturation of the coffee cherries. The result is a sweet cup with a bright, clean finish. 

NIGHT RAVEN DECAF ~ MEDIUM ROAST $104

Tasting notes: pecan, cherry, milk chocolate

Smooth, balanced, and slightly sweet. This full-bodied medium roast undergoes a natural decaffeination process (Mountain Water Process) that retains nearly all of the original flavor profile, while successfully extracting and removing 99.9% of the caffeine. USDA Certified Organic.

ANAEROBIC el AMATE ~ LIGHT ROAST $106

Process: Anaerobic. Washed

Anaerobic coffee undergoes a process in which after the ripened coffee cherries are harvested and pulped, the seeds, or "beans" are set into an air-restricted container to ferment for a few days. The result, if done correctly, is a bright, fruity, complex, and completely unique flavour profile.  Sourced and produced directly from the Villatoro family farm located in the Huehuetenango region of Guatemala, this coffee is handled with extreme care every step of the way to your cup. Coffee of this quality and exclusivity are rare to come by in the United States and abroad, and we have taken great care in roasting them smoothly to their highest potential. 

BOURBON LAVADO ~ LIGHT ROAST $106

Tasting Notes: peach, plum, pomegranate

Process: Washed

This coffee is sourced directly from the Villatoro family, a multi-generational coffee-producing family in the western highlands region of Guatemala. Due to the high elevation, volcanic soil, and unique microclimates, this region boasts some of the most unique and quality coffees our fair planet provides. The coffee here is ethically planted, frown, hand-picked, and processed by the Villatoro family. Coffee of this quality and exclusivity are rare to come by in the United States and abroad, and we have taken great care in micro-batch roasting them smoothly to their highest potential.

“Bourbon” is a reference to the sub-variety of the Coffea Arabica species, whereas “Lavado” is a referent to the “washed process” in which the coffee is allowed to ferment for a short period before being washed, dried, and bagged.
